  1. So fascinatingly about this oil and about the studies you mentioned. What type of oil is best?– unrefined, organic, etc?
    Also, what’s the difference between MCT oil and coconut? I’ve been hearing a lot about MCT.

    • I am not an expert in the nuances of different coconut oils but the least refined, as well as organic, will have a better nutritional profile. That said, refined coconut oil is great for those who prefer a non-coconutty flavor in foods and for higher heat cooking methods. Refined oils hold up better than unrefined oils to frying or sautéing at high heat. Unrefined coconut oil has a lot of aromatic and flavor compounds that, for some, are overwhelming, hence the refined works here. MCT oil is much higher in medium chain fatty acids than coconut, which is only about 60% (palm oil is closer to 50%). It is also a highly processed oil, so I have mixed feelings about recommending it as an everyday oil. To make MCT, coconut or palm is fractionated, a refining process that removes just about everything except the medium chain fats. There’s plenty on the net about benefits to MCT oils so I won’t go into that here.

    • MCT is more concentrated in medium chain fats, whereas coconut oil is the whole food form, still rich in MCT’s but less than the oil of said name.

    • Great question. Readers! send your favorite coconut oil recipes! I personally like curries made with coconut oil, also stir fried veggies and shrimp; sugar snap peas sautéed in coconut oil, then add garlic, tamari and toasted sesame seeds. I always add a heaping tbsp of coconut oil or coconut butter to oatmeal or another cooked breakfast grain. My nephew swears by the energizing properties of bulletproof coffee, where you add coconut oil to coffee. This might not be good idea on a regular basis, but on occasion. Smoothies are a great way to work in coconut oil.

  4. Great article! My wife and I have been enjoying coconut oil for years now. At her most recent checkup, her blood test results were described as “rock star” (not literally, mind you!) by her doctor’s office.

    • Great to hear! One day I believe it will be common to check particle size and subfractions, which should be off the charts as well with coconut oil. Maybe she had that test. Sometimes called NMR.
